The latest edition updates the model framework for retail food safety, with changes addressing preventive management, employee health, and operational procedures.
The U.S. Food and Drug Administration has published the 2026 Food Code, a model used by governmental jurisdictions to develop food safety requirements for retail and foodservice establishments.
For grocery stores operating delis, prepared-food counters, and other food-handling departments, the new edition provides an opportunity to review existing practices.
Key updates operators should review
• Food safety management systems: The code introduces a definition and provisions addressing when a system is required.
• Management accountability: It explicitly addresses the person in charge’s responsibility to maintain active managerial control.
• Employee health: Updated provisions address documentation of employee illness policies.
• Food defense: New provisions address employee training on protecting food against intentional contamination.
• Operational procedures: Revisions cover reusable containers, cooling methods, and equipment and utensil disinfection.
What does publication mean for your store?
The 2026 Food Code is a model, rather than an automatically enforceable nationwide rule. Operators should confirm the applicable requirements and adoption status with their regulatory authority.
HRCOC recommends reviewing procedures with department managers, identifying training needs, and assigning clear responsibility for follow-through.
