On this occasion, we will talk about the enigmatic town of Chihuahua that surprises all tourists.
The first mentions of this enigmatic city are found in the report of the conquistador Don Francisco de Ibarra in 1566, who described it as “of great size, height and strength”, with buildings of up to seven floors. In the ancient city of Paquimé, which gave rise to Casas Grandes, settlements were found dating back to 600 AD. By the time the Spanish arrived, the city had already been deserted by its original inhabitants, which is believed to have happened around the 6th century.
This beautiful pre-Hispanic city is characterized by its desert environment and its civil and religious buildings made of compacted earth. You can get delicious appetizers such as Sotol, accompanied by snacks with curd and some stew with dried meat, such as barbacoa or a good cut of meat.
For dessert, you can taste local peaches or apples. It is located at 1,400 m above sea level, in a desert climate but with fresh and dry air, and the average temperature is 17º C.
Among its most traditional dishes are red chile with dried meat, Mexican-style machaca or with egg, chile with asadero, chile pasa with meat or cheese, flour tortillas, harinillas (bread made from corn), traditional charcoal-grilled meat or American-style cuts of meat, as well as the delicious discada, dried zucchini with cheese, dried fruit, ranch cheese, asadero, Mennonite cheese, Serrano chorizo, as well as delicious fresh fish dishes from the state’s dams such as: bear broth (catfish broth with vegetables), fried mojarra or a delicious rainbow trout with cilantro or mustard or desserts such as walnut and apple pie.
Another typical dish is burritos, which have crossed borders. They are prepared with flour tortillas and filled with beef or pork, beans or chili with cheese. Among other stews, with a unique flavor that can only be found in Chihuahua. The burritos from Villa Ahumada stand out, which are of great tradition.
Chihuahua Style Discada Tacos
Information on typical Chihuahuan food indicates that discada owes its name to the fact that it is traditionally prepared in the countryside, over a wood fire, on disused plowing discs, which are recovered as large metal griddles.
The main ingredients of the discada are chopped beef and bacon, chorizo, jalapeño peppers, tomato, onion, garlic, pepper and salt. Its flavor improves if dark beer and/or white tequila are added during cooking, allowing the alcohol to evaporate.
Machaca with egg
Among the 10 most popular recipes from Chihuahua, machaca with egg cannot be missing. Machaca is a dried meat, tenderized and shredded with stones, very popular in northern Mexico. It is also called aporreadillo and machacado and the usual meats are beef and venison dehydrated with salt, sun and wind.
The way the meat is prepared gives it a peculiar flavor and in times past, people who made long trips through the vast territories of northern Mexico carried their provisions of machaca with them to eat along the way with wild quail eggs.
The recipe is prepared by making a sauté of tomatoes, onions and jalapeño peppers, then adding the dried and shredded meat. Finally, add the slightly beaten eggs and cook until tender, seasoning with salt and pepper to taste.
