The ancestral mezcal is a completely neat, from the selection of the magueyes, composed by:
° Cooking: from the pineapples that is done in a wood oven conical underground which can take 4 to 5 days
° Grinding: based on a mallet (wooden stick) manual way
° Fermentation: takes place in pine wood vats The process may include maguey fiber, which lasts 7 to 15 days.
° Distillation: with direct fire in a clay pot and clay bush, using water completely direct cleaning of the spring, the ciching of 4 days and the second distillation for 2 to 3 days.
