    Producers of Mezcal Ancestral, originally from Santo Domingo,Teojomulco, Sola de Vega, Oaxaca by Maestro Mezcalero Jorge Sánchez with notes of clay on the palate and wood with a sweet cooked agave body with vintage earthy vintage.

    Santo Domingo Teojomulco, Sola de Vega, Oaxaca is a community in the heart of the Sierra Sur of Oaxaca, this area is known Due to its excellent production of mezcal, a great differential that makes the Rincón de Dios palenque unique is that it has a spring nourished with minerals and other elements that no other mezcal in the same Ancestral category has.

    Master Jorge Sánchez has the said family heritage activity, being the 4th generation in his paternal family, When he lived in Santa María Sola de Vega, his grandfather Carlos Sánchez taught him theory and practice from the age of 8, which he has been passing on to his children, since he proudly have been getting involved in the area, he has been producing this drink for more than 20 years.

    PROCESS ANCESTRAL

    The ancestral mezcal is a completely neat, from the selection of the magueyes, composed by:

    ° Cooking: from the pineapples that is done in a wood oven conical underground which can take 4 to 5 days

    ° Grinding: based on a mallet (wooden stick) manual way

    ° Fermentation: takes place in pine wood vats The process may include maguey fiber, which lasts 7 to 15 days.

    ° Distillation: with direct fire in a clay pot and clay bush, using water completely direct cleaning of the spring, the ciching of 4 days and the second distillation for 2 to 3 days. For 4 tons of maguey obtaining approx. 100 liters depending on the maguey.

     

    SCOPE

    Rincón de Dios is accepted by the most demanding palates in the world, in blind tasting a silver medal was obtained in the TOP 99 Best Mezcals in Mexico by CAVA Magazine in mezcal ancestral Tobalá, with the different notes to taste you can identify sweet, herbal, citrus and fruity flavors, depending on corresponds to the type of maguey used.

    Currently there are exports with great acceptance in United States of America in the states of California, Texas, Colorado, Missouri, Oklahoma. As well as in Belgium, Japan, among others.
